1 lb (450 g) large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups low-sodium chicken broth (or water)

4 cloves garlic, minced

1 medium onion, finely chopped

1 lemon, juiced and zested

1 tablespoon olive oil

2 tablespoons unsalted butter

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Rice: In a medium saucepan, bring 2 cups of chicken broth (or water) to a rolling boil. Stir in the rice along with a pinch of salt. Reduce the heat to low, cover the pot, and let it simmer for 15-18 minutes, or until the rice is tender and has absorbed all the liquid. Once done, remove from heat and keep it covered to allow it to steam and fluff.

    Prep the Shrimp: While the rice is cooking, take the shrimp and pat them dry with paper towels to ensure they sear nicely. Season the shrimp with salt, black pepper, and half of the lemon zest, ensuring they are evenly coated.

      Sauté the Aromatics: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Once the butter is melted, add the finely chopped onion. Sauté for about 3-4 minutes until the onion becomes soft and translucent. Then, add the minced garlic and red pepper flakes, stirring for an additional 1-2 minutes until the garlic is fragrant.

        Cook the Shrimp: With the heat increased to medium-high, gently place the seasoned shrimp into the skillet. Cook for approximately 2-3 minutes on one side, or until they turn a lovely pink. Flip the shrimp, add the remaining tablespoon of butter, and pour in the freshly squeezed lemon juice. Continue to cook for another 1-2 minutes, just until the shrimp are fully cooked through and opaque.
