30-Minute Lemon Garlic Shrimp Pasta

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 1 large lemon

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese, for serving (optional)

Cook the Pasta: Fill a large pot with salted water and bring it to a rolling boil. Add the spaghetti or linguine and cook according to the package instructions until al dente (usually about 8-10 minutes). Before draining, reserve 1/2 cup of the starchy pasta water to help bind the sauce later. Once done, drain the pasta and set it aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the shrimp in a single layer. Season generously with salt and pepper. Cook the shrimp for about 2-3 minutes on each side or until they are pink and opaque. Once cooked, remove the shrimp from the skillet and set them aside on a plate.

      Prepare the Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds or until the garlic becomes fragrant. Make sure not to burn the garlic as it can turn bitter.

        Combine Ingredients: Add the reserved pasta to the skillet, followed by the reserved pasta water. Mix in the lemon zest and fresh lemon juice. Toss everything together until the pasta is well coated in the garlic oil mixture.

          Add Shrimp and Tomatoes: Gently return the cooked shrimp to the skillet and add the halved cherry tomatoes. Toss the mixture carefully, heating it through for about 2-3 minutes, until everything is warmed and the tomatoes are slightly softened.
