2 large eggs, beaten until smooth

Prep the Eggplant: Begin by salting the diced eggplant to draw out any bitterness and excess moisture. Place the eggplant cubes in a colander, sprinkle evenly with salt, and allow them to rest for approximately 30 minutes. Afterward, rinse the eggplant thoroughly under cold water and then pat it dry with paper towels to remove any excess moisture.

    Create the Dry Coating: In a medium mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, smoked paprika, salt, and pepper. Stir the mixture well until all the ingredients are evenly distributed.

      Prepare the Egg Coating: In a separate small bowl, beat the eggs with a whisk or fork until fully blended and smooth. This will be used to help the breadcrumbs adhere to the eggplant.

        Bread the Eggplant: Take each cube of eggplant and first dip it into the beaten eggs, allowing any excess egg to drip off. Next, roll the eggplant in the breadcrumb mixture, ensuring that it is thoroughly coated on all sides. Repeat this process until all eggplant cubes are breaded.
