Apple Oat Blender Muffins

2 cups rolled oats

1 medium apple, peeled and diced (approximately 1 cup)

2 medium ripe bananas

1 cup unsweetened apple sauce

1/4 cup honey or maple syrup

1/4 cup almond milk (or your preferred milk)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

Optional: 1/2 cup chopped walnuts or pecans, and/or 1/2 cup raisins or chocolate chips

Instructions
 

Preheat your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it lightly with coconut oil to prevent sticking.

    Place the rolled oats in a high-speed blender and blend for about 30 seconds, or until you achieve a fine, flour-like consistency.

      To the blender, add the diced apple, ripe bananas, apple sauce, honey or maple syrup, almond milk, melted coconut oil, and vanilla extract. Blend everything together until the mixture becomes smooth and creamy.

        In a large mixing bowl, combine the blended mixture with baking powder, baking soda, ground cinnamon, and salt. Stir well until fully combined, ensuring a consistent batter.

          If you’d like an extra crunch or flavor, fold in your choice of chopped walnuts, pecans, raisins, or chocolate chips into the batter.

            Using a ladle or scoop, pour the muffin batter into the prepared muffin tin, filling each cup about three-quarters full for optimal rising.

              Bake the muffins in the preheated oven for 20-25 minutes. They’re done when a toothpick inserted into the center comes out clean, with no wet batter clinging to it.

                Once baked, take the muffins out of the oven and let them cool in the pan for about 5 minutes. Afterward, carefully transfer them to a wire rack to cool completely.
