2 ripe avocados

4 whole wheat tortillas

Prepare the Avocado: Cut the avocados in half and carefully remove the pit. Scoop the flesh into a mixing bowl. Use a fork to mash the avocado until it reaches a smooth, creamy consistency. Season with a pinch of salt and pepper, adjusting to taste. Set the mashed avocado aside.

    Cook the Eggs: In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat. Crack the eggs directly into the skillet. Season the eggs with salt and pepper. Gently scramble the eggs using a spatula, cooking them for about 3-4 minutes until they are just set but still have a creamy texture. Remove the skillet from the heat.

      Warm the Tortillas: In a separate pan or on a skillet, warm the whole wheat tortillas over low heat for approximately 10-15 seconds on each side, just until they become pliable. Alternatively, place the tortillas in the microwave for about 10 seconds to warm them up.
