1 ripe avocado, peeled and mashed

2 large eggs

1 cup fresh spinach, washed and dried

1/4 cup cherry tomatoes, halved

2 tablespoons feta cheese, crumbled (optional)

Salt and pepper to taste

1 tablespoon olive oil or butter

Squeeze of lemon juice (optional)

Red pepper flakes (optional, for added spice)

Prepare the Eggs: In a small bowl, crack the eggs and whisk them together with a pinch of salt and black pepper until well combined. Heat your choice of olive oil or butter in a non-stick skillet over medium heat. Once the pan is hot, carefully pour the beaten eggs into the skillet. Gently cook the eggs, stirring occasionally until they are scrambled and cooked to your preference. Once done, remove the eggs from the skillet and set aside.

    Sauté the Spinach: Using the same skillet (no need to wash it), add the washed spinach. Sauté over medium heat for about 1-2 minutes, stirring frequently until the spinach is wilted yet retains a vibrant green color. Once wilted, remove from heat and set aside.

      Assemble the Wrap: Place the whole grain tortilla flat on a clean, dry surface or plate. Spread the mashed avocado evenly across the tortilla, leaving a small margin along the edges to prevent spillage.

        Layer the Ingredients: On one side of the tortilla, evenly layer the scrambled eggs, sautéed spinach, and halved cherry tomatoes. If desired, sprinkle the crumbled feta cheese on top to add a creamy texture and flavor.
