Avocado Pasta with Chicken

12 oz pasta of your choice (fettuccine or penne work wonderfully)

2 ripe avocados, halved and pitted

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus additional for garnish

1/4 cup grated Parmesan cheese, plus more for serving

2 tbsp olive oil, divided

1 tbsp fresh lemon juice

Salt and black pepper, to taste

1 lb chicken breast, diced into bite-sized pieces

1 tsp Italian seasoning

1/2 cup cherry tomatoes, halved (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

    Prepare the Chicken: While the pasta cooks, heat 1 tablespoon of olive oil in a spacious skillet over medium heat. Season the diced chicken breast with Italian seasoning, salt, and black pepper. Add the seasoned chicken to the skillet and cook for about 6-7 minutes, or until the chicken is fully cooked and golden brown. Once cooked, remove the skillet from heat and set the chicken aside.

      Make the Avocado Sauce: In a food processor, combine the flesh of the avocados, minced garlic, basil leaves, grated Parmesan cheese, fresh lemon juice, and the remaining tablespoon of olive oil. Blend until the mixture is smooth and creamy. If the sauce is too thick for your liking, gradually add the reserved pasta water, one tablespoon at a time, until you achieve your preferred consistency. Season the sauce with salt and black pepper to taste.

        Combine Pasta and Sauce: In a large mixing bowl, combine the drained pasta, cooked chicken, and creamy avocado sauce. Gently toss the ingredients together until the pasta is evenly coated in the sauce.
