Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by greasing it or lining it with parchment paper to allow for easy removal of the bars later.

    Mix Dry Ingredients: In a large mixing bowl, add the rolled oats, baking powder, ground cinnamon, nutmeg (if you choose to use it), and salt. Use a whisk or spoon to mix the dry ingredients together until they are evenly distributed.

      Blend Wet Ingredients: In a separate medium-sized bowl, combine the applesauce, packed brown sugar, honey or maple syrup, milk, melted coconut oil, and vanilla extract. Whisk them together until the mixture is smooth and homogeneous.
