Ingredients

2 boneless, skinless chicken breasts

1 cup marinara sauce

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

4 whole-wheat pita breads

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Olive oil, for drizzling

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Cook the Chicken: Season both sides of the chicken breasts with salt, black pepper, garlic powder, onion powder, and Italian seasoning. Heat a skillet over medium heat and add a drizzle of olive oil. Once the oil is hot, add the chicken breasts. Cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked and no longer pink in the center. Remove the skillet from the heat and allow the chicken to cool slightly before slicing it thinly.

Prepare the Pita Pockets: Carefully cut each whole-wheat pita in half to form pockets, ensuring you don’t cut all the way through. Gently open each pocket to prepare for stuffing.

Stuff the Pitas: Begin by spooning a generous amount of marinara sauce into each half of the pita. Place a layer of thinly sliced chicken on top of the sauce. Follow with a generous sprinkle of shredded mozzarella cheese and grated Parmesan cheese to create a deliciously cheesy filling.

Bake to Perfection: Arrange the stuffed pitas on the prepared baking sheet. Drizzle a little olive oil over the top of each pita to enhance flavor and achieve a satisfying crunch. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted, bubbly, and slightly golden, and the pitas are heated throughout.

Garnish and Serve: Once baked, remove the pitas from the oven. Add fresh basil leaves on top of each pita melt for an aromatic touch. Serve your Baked Chicken Parmesan Pita Melts hot and enjoy every bite!
