Ingredients

1 cup rolled oats

1 cup milk (your choice of dairy or non-dairy)

1/2 cup Greek yogurt

1/2 cup cream cheese, softened to room temperature

1/3 cup honey or maple syrup (for sweetness)

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh strawberries, chopped into small pieces

1/4 cup sliced almonds (optional, for added crunch on top)

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by lightly greasing each cup with cooking spray or lining them with cupcake liners for easy removal.

Prepare Wet Ingredients: In a large mixing bowl, combine the milk, Greek yogurt, softened cream cheese, honey (or maple syrup), egg, and vanilla extract. Whisk everything together until the mixture is smooth and all ingredients are well blended.

Mix Dry Ingredients: In another bowl, mix the rolled oats, baking powder, and salt. Stir thoroughly to ensure that the baking powder is evenly mixed throughout the oats.

Combine Mixtures: Slowly add the dry oat mixture to the wet ingredients. Stir gently until just combined. Next, fold in the chopped strawberries carefully, avoiding overmixing to keep the strawberries intact and prevent them from breaking down.

Fill Muffin Tin: Using a spoon or a measuring scoop, evenly distribute the oatmeal mixture into each muffin cup, filling them about 3/4 full.

Add Toppings (Optional): If you’d like an added crunch, sprinkle a few sliced almonds on top of each cup before baking.

Bake: Place the muffin tin in your preheated oven and let them bake for 20-25 minutes. They are done when they are golden on top, and a toothpick inserted into the center of one comes out clean.

Cool and Serve: After baking, allow the oat cups to cool in the tin for about 10 minutes. Then carefully transfer them to a wire rack to cool completely. These cups can be enjoyed warm or at room temperature!
