Ingredients

1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain

2 cups broccoli florets

1/2 cup snap peas (optional)

1 cup bell pepper, thinly sliced (any color)

3 cloves garlic, minced

1-inch piece ginger, minced or grated

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sugar

Cooked jasmine or basmati rice, for serving

Sesame seeds and chopped green onions, for garnish

Instructions

Marinate the Beef: In a mixing bowl, combine the sliced beef with 2 tablespoons of soy sauce, cornstarch, and sugar. Use your hands or a spoon to mix well, ensuring each piece of beef is coated. Allow it to marinate for at least 15 minutes while you prepare the other ingredients.

Prepare the Stir-Fry Sauce: In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, sesame oil, minced ginger, and minced garlic until fully combined. Set this mixture aside as your stir-fry sauce.

Blanch the Vegetables: Fill a pot with water and bring it to a rolling boil. Carefully add the broccoli florets and snap peas (if using) to the boiling water and blanch for about 2 minutes. Immediately transfer the vegetables to an ice bath (bowl of ice water) to stop the cooking process. Once cooled, drain well and set aside.

Heat the Pan: Place a large skillet or wok over medium-high heat. Add 2 tablespoons of vegetable oil and heat until it shimmers, indicating it's ready for cooking.

Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Allow the beef to sear undisturbed for about 2-3 minutes until browned. After searing, stir-fry for an additional minute until the beef is just cooked through. Remove the beef from the skillet and set it aside on a plate.

Stir-Fry the Vegetables: Using the same skillet, add the blanched broccoli, snap peas, and sliced bell pepper. Stir-fry these vibrant vegetables for 3-4 minutes, or until they are tender-crisp.

Combine Everything: Return the cooked beef to the skillet along with the prepared stir-fry sauce. Gently toss all ingredients together for another 2-3 minutes, ensuring the beef and vegetables are evenly coated with the sauce and heated through.

Serve: Remove from heat and serve the beef and broccoli stir-fry hot over a generous bed of cooked rice. For a finishing touch, garnish with a sprinkle of sesame seeds and a handful of finely chopped green onions, adding a burst of flavor and visual appeal.
