Ingredients

1 lb ground beef (preferably 80/20 for optimal flavor)

1 cup strawberries, hulled and coarsely chopped

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon rice vinegar

2 cloves garlic, finely minced

1 teaspoon fresh ginger, finely grated

1 medium carrot, finely grated

3 green onions, sliced (keeping white and green parts separated)

1 tablespoon sesame oil

1 head of butter or romaine lettuce, leaves gently separated for wrapping

Salt and pepper, to taste

Fresh cilantro leaves, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Strawberry Glaze:

    - In a small saucepan, combine the chopped strawberries, soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Place the saucepan over medium heat.

      - Allow the mixture to come to a gentle simmer. Cook for approximately 10-15 minutes, stirring occasionally, until the strawberries have softened and the glaze thickens slightly.

        - Remove the saucepan from heat. For a smoother glaze, use an immersion blender or transfer to a blender and blend until smooth, if desired. Set the glaze aside to cool.

          Cook the Beef:

            - In a large skillet, warm the sesame oil over medium-high heat.

              - Once hot, add the ground beef, seasoning it generously with salt and pepper. Cook the beef for 5-7 minutes, using a spatula to break it into small pieces, until thoroughly browned.

                - If there's excess fat, drain it from the skillet.

                  Add Vegetables:

                    - Stir in the grated carrot and the white parts of the sliced green onions into the cooked beef.

                      - Sauté the mixture for an additional 3-4 minutes, or until the vegetables are tender.

                        Combine with Strawberry Glaze:

                          - Pour the prepared strawberry glaze over the beef and vegetable mixture, stirring to ensure everything is evenly coated.

                            - Let it cook together for another 2-3 minutes, allowing the flavors to meld beautifully.

                              Assemble the Wraps:

                                - Select a sturdy lettuce leaf and spoon a generous portion of the beef mixture into the center.

                                  - Top with the green parts of the sliced green onions and a few fresh cilantro leaves for added freshness.

                                    - For extra crunch and flavor, sprinkle sesame seeds over the filling.

                                      Serve:

                                        - Arrange the lettuce wraps elegantly on a serving platter. Serve immediately while warm, offering extra strawberry glaze on the side for guests to drizzle as they desire!
