Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup buffalo sauce (can be store-bought or homemade)

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded mozzarella cheese

4-6 large flatbreads or tortillas (whole wheat or regular)

1/2 cup Greek yogurt or sour cream

Fresh parsley or cilantro, finely chopped (for garnish)

Optional: extra buffalo sauce for drizzling

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This step is crucial for achieving perfectly roasted cauliflower.

Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, buffalo sauce, garlic powder, onion powder, salt, and pepper. Toss everything together until the cauliflower is well-coated in the sauce and seasonings.

Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on a baking sheet lined with parchment paper. Roast for 20-25 minutes, or until tender and lightly crispy at the edges. Be sure to toss the cauliflower halfway through to ensure even roasting.

Assemble the Filling: Once the roasted cauliflower is out of the oven and slightly cooled, mix in the shredded mozzarella cheese until it’s evenly distributed throughout the mixture.

Prepare the Flatbreads: On a clean surface or cutting board, lay out the flatbreads or tortillas. Spoon a generous portion of the buffalo cauliflower mixture onto one half of each flatbread, then fold the other half over to create a half-moon shape.

Cook the Flatbreads: Heat a non-stick skillet over medium heat. Cook each stuffed flatbread for about 3-4 minutes on each side, or until they are golden brown and crispy. Make sure to flip them carefully to prevent the filling from spilling out and to allow the cheese to melt completely inside.

Serve: Remove the stuffed flatbreads from the skillet and allow them to cool for a minute or two. Cut each one into wedges and serve warm. Top with a dollop of Greek yogurt or sour cream, and sprinkle with chopped parsley or cilantro for a fresh touch. For those who enjoy an extra kick, drizzle some additional buffalo sauce on top before serving.
