4 large bell peppers (any color)

2 cups cooked chicken, shredded (rotisserie chicken works best)

1 cup BBQ sauce (choose your favorite brand)

1 ½ cups shredded cheddar cheese

1 cup cooked rice (white or brown)

½ cup corn (canned or frozen)

½ cup black beans, rinsed and drained

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Prepare the Peppers: Carefully slice the tops off each bell pepper and gently remove the seeds and white membranes inside. Place the cleaned peppers upright on a cutting board or plate.

      Make the Filling: In a large mixing bowl, combine the shredded chicken with the BBQ sauce. Add in 1 cup of the shredded cheddar cheese, cooked rice, corn, black beans, chopped red onion, minced garlic, smoked paprika, cumin, and a pinch of salt and pepper. Stir thoroughly until all ingredients are well combined and coated with the BBQ sauce.

        Stuff the Peppers: Using a spoon, carefully fill each prepared bell pepper with the BBQ chicken mixture. Pack the filling lightly but firmly to allow the ingredients to hold together. Arrange the stuffed peppers upright in a baking dish.
