1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup shredded cheddar cheese, divided

1 cup shredded mozzarella cheese, divided

1 cup cream of chicken soup (store-bought or homemade for a fresh touch)

1 cup chicken broth (low-sodium recommended)

1 cup frozen peas and carrots mix (or your favorite mixed vegetables)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to get it ready for baking.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 2-3 minutes, or until it becomes translucent. Next, add the diced chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken pieces are no longer pink in the center. Season with salt, pepper, paprika, and thyme. Finally, add the minced garlic and cook for an additional minute until fragrant.

      Mix the Ingredients: In a large mixing bowl, combine the cooked rice, the chicken mixture from the skillet, cream of chicken soup, chicken broth, and the frozen peas and carrots. Toss in half of the cheddar and mozzarella cheeses. Stir gently but thoroughly to ensure all ingredients are well-coated with the creamy mixture.
