Ingredients

8 small flour tortillas

1 cup corn kernels (you can use fresh, frozen, or canned)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1/2 cup diced green chilies (choose mild or hot based on your heat preference)

1/4 cup finely chopped red onion

1/4 cup chopped fresh cilantro (optional, for added freshness)

1 teaspoon garlic powder

1 teaspoon ground cumin

1 tablespoon olive oil (plus more as needed for cooking)

Salt and freshly ground black pepper, to taste

Sour cream and salsa, for serving

Instructions

Prepare the Filling: In a large mixing bowl, combine the corn kernels, shredded Monterey Jack cheese, shredded sharp cheddar cheese, diced green chilies, finely chopped red onion, and chopped cilantro (if using). Sprinkle in the garlic powder, ground cumin, and a pinch of salt and pepper. Mix thoroughly until all ingredients are well incorporated and evenly distributed.

Heat the Pan: Preheat a large skillet or griddle over medium heat. Pour in 1/2 tablespoon of olive oil and allow it to heat up.

Assemble the Quesadillas: Take one flour tortilla and place a generous portion of the prepared filling on one half of the tortilla. Carefully fold the other half over the filling to form a half-moon shape. Repeat this assembly process with the remaining tortillas and filling until all are prepared.

Cook the Quesadillas: In the preheated skillet, add the first quesadilla (you can cook 2-3 at a time, depending on the size of your skillet). Allow it to cook for 3-4 minutes, or until the bottom side turns golden brown and crispy. Gently flip the quesadilla using a spatula and cook the other side for an additional 3-4 minutes. If the quesadilla starts to stick or the pan appears dry, drizzle in a bit more olive oil.

Repeat the Cooking Process: Once the quesadilla is cooked, remove it from the skillet and transfer it to a cutting board. Let it cool for a few moments, then slice it into wedges. Continue cooking the remaining quesadillas one at a time, repeating the flipping and slicing process.

Serve: Plate the quesadilla wedges warm, accompanied by sour cream and salsa for dipping.
