Cheesy Spinach and Chicken Stuffed Shells

20 jumbo pasta shells

2 cups cooked chicken, shredded

1 cup fresh spinach, finely chopped (or 1/2 cup frozen spinach, thawed and drained)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup Parmesan cheese, grated (divided)

1 large egg

2 cups marinara sauce (divided)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

Fresh basil or parsley, chopped (for garnish, optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, bring salted water to a boil and cook the jumbo pasta shells according to the package instructions until al dente. Drain the shells and allow them to cool slightly for easy handling.

      In a mixing bowl, combine the shredded chicken, chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, 1/4 cup of Parmesan cheese, the egg, garlic powder, onion powder, salt, and black pepper. Stir the mixture until all ingredients are evenly incorporated.

        Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish to create a flavorful base for the shells.

          Carefully stuff each pasta shell with the chicken and spinach mixture, making sure they are filled generously. Arrange the stuffed shells in the baking dish, placing them over the marinara sauce.

            Once all the shells are placed, pour the remaining marinara sauce over them, ensuring that every shell is well coated.

              Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top of the sauce, creating a cheesy layer.

                Cover the baking dish tightly with aluminum foil to prevent the cheese from burning. Bake in the preheated oven for 25 minutes.

                  After 25 minutes, carefully remove the foil and continue to bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden brown.

                    Once done baking, take the dish out of the oven and let it cool for a few minutes to set. If desired, garnish with freshly chopped basil or parsley for a pop of color and flavor.
