Ingredients

1 lb (450g) ground turkey

4 cups fresh broccoli florets (or frozen, thawed)

1 cup cooked brown rice (or quinoa for a healthier option)

1 cup shredded cheddar cheese, divided

1 cup cream of mushroom soup (store-bought or homemade)

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt (or to taste)

1 tablespoon olive oil

½ cup breadcrumbs (optional for topping)

1 teaspoon paprika (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by greasing it with cooking spray or a light coating of olive oil.

Cook the Turkey: In a large skillet, pour in the olive oil and heat it over medium heat. Add the ground turkey, breaking it up with a wooden spoon as it cooks. Cook for about 5-7 minutes, or until the turkey is browned and no longer pink.

Season the Meat: Once the turkey is fully cooked, add the garlic powder, onion powder, salt, and black pepper. Stir thoroughly to ensure the seasonings are evenly distributed throughout the meat.

Combine the Ingredients: In a large mixing bowl, combine the cooked turkey, broccoli florets, cooked rice, cream of mushroom soup, milk, and half of the shredded cheddar cheese. Mix gently but thoroughly until everything is well coated and evenly blended.

Transfer to Baking Dish: Carefully pour the turkey and broccoli mixture into the greased baking dish, spreading it evenly to ensure uniform cooking.

Add Cheese and Breadcrumbs: Generously sprinkle the remaining shredded cheddar cheese over the top of the mixture. If desired, add a layer of breadcrumbs for a crunchy texture. For a hint of spice, dust the top with paprika.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes. You’ll know it’s done when the cheese is bubbly and has developed a light golden crust.

Cool and Serve: Once baked, remove the casserole from the oven and let it sit for 5 minutes to cool slightly. Slice into squares and serve warm.
