Chicken Lettuce Wraps with Cherry Glaze

1 pound ground chicken

1 tablespoon olive oil

1 clove garlic, minced

1 inch fresh ginger, grated

1/4 cup red bell pepper, finely chopped

1/4 cup green onions, chopped

1/4 cup carrots, shredded

1/4 cup water chestnuts, diced

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons cherry preserves

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)

Salt and pepper to taste

1 head of butter or iceberg lettuce, leaves separated

Sesame seeds and extra green onions for garnish (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the ground chicken. Use a wooden spoon to break the chicken apart as it cooks. Sauté until the chicken is browned and thoroughly cooked, around 5-7 minutes.

    Flavor the Mixture: Stir in the minced garlic and grated ginger. Sauté for about 1 minute or until aromatic. Next, add the finely chopped red bell pepper, chopped green onions, shredded carrots, and diced water chestnuts. Cook everything together for another 3-4 minutes, until the vegetables begin to soften.

      Prepare the Glaze: In a separate small bowl, combine the soy sauce, cherry preserves, rice vinegar, sesame oil, and a pinch of salt and pepper. Mix until smooth. Pour this glaze over the chicken and vegetable mixture in the skillet. Stir well to combine and let it simmer for a few minutes.
