Ingredients

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

1 (14 oz) can sweetened condensed milk

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 2 lemons

3 large egg yolks

1 teaspoon vanilla extract

1/2 teaspoon salt

Powdered sugar, for dusting (optional)

Fresh mint leaves, for garnish (optional)

Instructions

Prepare the Base:

    - Preheat your oven to 350°F (175°C).

      - In a medium mixing bowl, combine 1 cup of graham cracker crumbs, 1/2 cup of melted unsalted butter, and 1/4 cup of granulated sugar. Stir the mixture until well blended.

        - Firmly press this mixture into the bottom of a greased 8x8 inch (20x20 cm) baking dish, ensuring an even layer. Bake the crust in the preheated oven for 10 minutes, then remove and allow it to cool slightly while you prepare the filling.

          Make the Lemon Filling:

            - In a large mixing bowl, whisk together 1 can of sweetened condensed milk, 1/2 cup of freshly squeezed lemon juice, the zest of 2 lemons, 3 large egg yolks, 1 teaspoon of vanilla extract, and 1/2 teaspoon of salt. Ensure all the ingredients are smooth and well combined with no lumps.

              Combine and Bake:

                - Pour the lemon mixture over the slightly cooled graham cracker crust, spreading it out evenly with a spatula. Return the baking dish to the oven and bake for an additional 15-20 minutes. The filling should be set with a slight jiggle in the center.

                  Cool Down:

                    - Once baked, remove the dish from the oven and let it cool at room temperature for about 30 minutes. After it reaches room temperature, cover and refrigerate for at least 2 hours, or until the bars are fully chilled and firm to the touch.

                      Slice and Serve:

                        - To serve, lift the bars out of the baking dish using the edges of the parchment paper (if lined). Cut into squares or rectangles, as preferred.

                          - For a finishing touch, dust the bars with powdered sugar and garnish with fresh mint leaves just before serving.

Enjoy the refreshing taste of these Zesty Lemon Chill Bars as a delightful dessert, perfect for warm days!
