1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 medium onion, finely chopped

3 cloves garlic, minced

1 packet taco seasoning (or homemade mix: 1 tbsp chili powder, 1 tsp ground cumin, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, and salt and pepper to taste)

1 cup diced tomatoes (fresh or canned)

1/2 cup sweet corn (optional, for added sweetness)

4 large flour tortillas

1 cup shredded sharp cheddar cheese

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Beef: In a large skillet, preheat over medium heat. Add the ground beef and cook, stirring frequently, for about 5-7 minutes or until browned. Use a spatula to break the beef into smaller pieces as it cooks. If there's any excess fat, drain it off.

    Sauté the Vegetables: Add the finely chopped onion and minced garlic to the skillet with the browned beef. Cook for an additional 2-3 minutes until the onions are softened and have turned translucent, releasing their sweet aroma.

      Season the Mixture: Mix in the taco seasoning and diced tomatoes (along with their juices). If you are including corn, add it now. Stir everything well to combine, then reduce the heat to low and let it simmer for about 5 minutes. This will allow the spices and flavors to meld together beautifully.

        Incorporate Beans: Gently fold in the black beans and allow them to heat through for 3-4 minutes. Taste the mixture and adjust the seasoning with additional salt or pepper as needed. Once heated, remove the skillet from the heat.
