1 cup cooked chicken, diced (rotisserie chicken is a convenient option)

2 tablespoons vegetable oil

2 large eggs, beaten

1 cup mixed vegetables (such as peas, carrots, and corn)

3 green onions, finely chopped

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional, for enhanced flavor)

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Prepare the Rice: If using freshly cooked rice, spread it out evenly on a baking sheet and let it cool for about 30 minutes. This helps to reduce moisture and prevents the fried rice from becoming mushy.

    Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beaten eggs and scramble them until they're fully cooked and just set. Once done, transfer the scrambled eggs to a plate and set aside.

      Cook the Chicken and Vegetables: Using the same skillet, add the remaining tablespoon of vegetable oil. Once the oil is hot, add the diced chicken and stir-fry for about 2 minutes until it's heated through.
