1 cup carrots, peeled and diced

1 cup celery, diced

1 cup frozen peas, no need to thaw

1 medium onion, finely diced

3 cloves garlic, minced

4 cups chicken broth (low-sodium for a healthier option)

1 cup heavy cream

1/3 cup all-purpose flour

1/4 cup unsalted butter

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 pre-made pie crusts (store-bought or homemade if preferred)

1 egg, beaten (for the glaze)

Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the diced onions, carrots, and celery. Sauté the mixture for about 5 minutes, or until the vegetables are slightly tender and the onions are translucent.
