150g pancetta or guanciale, diced into small cubes

3 large eggs

100g Pecorino Romano cheese, finely grated

50g Parmigiano-Reggiano cheese, finely grated

2 cloves garlic, peeled and crushed

Salt, to taste

Freshly cracked black pepper, to taste

Fresh parsley, finely chopped (optional, for garnish)

Instructions
 

Cook the Pasta:

    - Fill a large pot with water, season generously with salt, and bring it to a rolling boil.

      - Add the spaghetti and cook according to the package instructions until it reaches an al dente texture. Before draining, make sure to reserve about 1 cup of the starchy pasta water for later use.

        Prepare the Sauce:

          - In a medium mixing bowl, crack the eggs and whisk them together. Add the finely grated Pecorino Romano and Parmigiano-Reggiano cheeses, blending until the mixture is smooth and uniform. Set this mixture aside to develop the flavors.

            Cook the Pancetta/Guanciale:
