2 cups sweet potatoes, peeled and cut into cubes

1 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup milk (or use evaporated milk for a richer taste)

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon pure vanilla extract

For Serving (optional):

Whipped cream or vanilla ice cream

Instructions
 

Prepare the Pie Crust:

    - In a medium-sized mixing bowl, whisk together the flour, salt, and granulated sugar until well combined.

      - Add the chilled, diced butter. Using a pastry cutter or your fingertips, incorporate the butter into the mixture until it resembles coarse crumbs, with pea-sized pieces of butter remaining.

            Cook the Sweet Potatoes:

              - Bring a large pot of water to a rolling boil. Carefully add the cubed sweet potatoes and cook for about 15-20 minutes, or until they are fork-tender.

                - Once cooked, drain the sweet potatoes and allow them to cool slightly. Then, mash them with a fork or potato masher until smooth. Ensure you have 2 cups of mashed sweet potato.

                  Preheat the Oven:

                    - Preheat your oven to 350°F (175°C), ensuring it is fully heated before baking the pie.

                      Make the Filling:

                        - In a large mixing bowl, combine the smooth mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Mix well.
