3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

Salt and freshly ground black pepper, to taste

Optional: 1 avocado, diced, for a creamy addition

Prepare the Corn: If you're using fresh corn, start by bringing a large pot of water to a rolling boil. Add the ears of corn and let them cook for 3 to 5 minutes until they are tender. Once done, transfer the corn to an ice bath immediately to stop the cooking process. After they have cooled, carefully slice the kernels off the cob and set them aside. (If you prefer convenience, feel free to use canned or frozen corn, ensuring it is adequately thawed and drained.)
