2 cups fresh corn kernels (approximately 3-4 ears of corn)

2 medium ripe tomatoes, diced

1 small red onion, finely chopped

1 jalapeño pepper, seeds removed and minced

Juice of 2 limes

1 teaspoon olive oil

Salt and pepper to taste
