Ingredients

1 French baguette, sliced into 1/2 inch rounds

1 cup fresh cranberries, rinsed and drained

1 large apple (preferably Granny Smith or Honeycrisp), cored and diced

1 cup brie cheese, cut into small cubes

1/2 cup pecans, coarsely chopped

1/4 cup honey, plus extra for drizzling

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried rosemary)

1 tablespoon olive oil

Salt and freshly ground black pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Baguette Slices: On a large baking sheet, arrange the slices of baguette in a single layer. Lightly brush one side of each slice with olive oil. Toast the baguette slices in the oven for about 5-7 minutes, or until they achieve a golden brown color. Once toasted, remove them from the oven and set aside to cool slightly.

Make the Cranberry Apple Topping: In a medium saucepan, combine the rinsed cranberries, diced apple, chopped pecans, honey, finely chopped rosemary, and a sprinkle of salt and pepper. Cook the mixture over medium heat for about 5-8 minutes, stirring occasionally, until the cranberries start to pop and the apples soften. Once cooked, remove the saucepan from the heat and allow the mixture to cool for a few minutes.

Assemble the Crostini: Take each toasted baguette slice and place a small piece of brie cheese on top. Next, add a generous spoonful of the warm cranberry apple mixture over the brie on each slice.

Final Toast: Return the assembled crostini to the baking sheet and place back in the oven. Toast for an additional 3-5 minutes, or until the brie cheese begins to melt deliciously.

Serve: Carefully transfer the warm crostini to a serving platter. Drizzle any remaining honey over the top for added sweetness and garnish with extra chopped rosemary for a festive touch.

Enjoy: Serve these delightful Cranberry Apple Brie Crostini warm and relish in the flavors!
