Ingredients

1 lb boneless, skinless chicken breasts

1 cup orzo pasta

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 cup heavy cream

1 cup baby spinach (optional)

Juice and zest of 1 large lemon

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Vegetables: In a large pot, warm the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté them for about 5 minutes, or until they are softened and the onions begin to turn translucent. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant, being careful not to burn the garlic.

Cook the Chicken: Season the chicken breasts generously with salt, pepper, dried thyme, and oregano. Place the seasoned chicken into the pot and cook for approximately 4-5 minutes on each side, or until they are lightly golden brown. They don’t need to be cooked through at this point, as they will finish cooking in the broth.

Add Broth & Orzo: Pour the chicken broth into the pot and bring the mixture to a gentle simmer. Once simmering, stir in the orzo pasta. Cook according to the package instructions, typically about 8-10 minutes, stirring occasionally to prevent sticking.

Create Creaminess: When the orzo is tender yet firm, lower the heat. Stir in the heavy cream, along with the juice and zest of the lemon. If you are using baby spinach, now is the time to add it, allowing it to wilt gently into the warm soup.

Finish the Chicken: Carefully remove the cooked chicken breasts from the pot. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken back into the soup, stirring it in to combine. Taste and adjust the seasoning with additional salt and pepper as needed.

Serve: Ladle the creamy soup into bowls, topping each with a sprinkle of fresh, chopped parsley for added color and flavor. Enjoy the delightful combination of zesty lemon and tender chicken in this comforting bowl of goodness.
