1 cup canned chickpeas, drained and rinsed

1 large red bell pepper, roasted and peeled

2 tablespoons tahini

2 tablespoons olive oil, plus extra for drizzling

2 tablespoons fresh lemon juice

1 garlic clove, minced

1/2 teaspoon ground cumin

Salt and pepper to taste

1-2 tablespoons water (as needed for desired consistency)

Fresh parsley or a sprinkle of paprika, for garnish

Roast the Bell Pepper: Preheat your oven to 450°F (232°C). Arrange the whole red bell pepper on a baking sheet. Roast in the oven for approximately 25-30 minutes, turning the pepper halfway through to ensure even charring. The skin should be blistered and charred. Once done, remove from the oven and cover with foil or place it in a bowl and cover to steam for about 10 minutes. This process will make peeling easier. Once cooled slightly, peel off the charred skin, remove the stem and seeds, and set aside.

    Blend the Ingredients: In a food processor, combine the roasted red bell pepper, drained chickpeas, tahini, olive oil, lemon juice, minced garlic, and ground cumin. Pulse until the mixture turns smooth and creamy, scraping down the sides as needed.

      Adjust Consistency: If your hummus appears too thick, add water gradually, one tablespoon at a time, blending after each addition until you reach your desired smoothness. Taste and season with salt and pepper according to your preference.
