Ingredients

1 medium spaghetti squash

1 tablespoon olive oil

Salt and pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg (optional, for a hint of warmth)

1 cup cooked chicken or sautéed mushrooms (optional, for added protein)

Fresh parsley, finely chopped (for garnish)

Red pepper flakes (optional, for a spicy kick)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for roasting the spaghetti squash.

Prepare the Spaghetti Squash: Carefully slice the spaghetti squash in half lengthwise. Use a spoon to scoop out the seeds and stringy bits from the center. Then, use a fork to scrape the insides lightly. This will help create the spaghetti-like strands once roasted.

Season and Roast: Brush the insides of each squash half generously with olive oil and season with salt and pepper. Place the squash cut-side down on a baking sheet lined with parchment paper. Roast in the oven for 40-50 minutes, or until the squash is fork-tender.

Make the Alfredo Sauce: While the squash is roasting, prepare the Alfredo sauce. In a medium saucepan over medium heat, combine the heavy cream, minced garlic, onion powder, garlic powder, and optional nutmeg. Allow it to simmer gently for approximately 5 minutes, stirring occasionally to prevent sticking.

Incorporate Cheese: Gradually whisk in the grated Parmesan cheese, stirring continually until it melts and the sauce becomes smooth. Continue cooking for an additional 3-4 minutes, allowing the sauce to thicken slightly. If using, fold in the cooked chicken or sautéed mushrooms at this stage. Taste and adjust seasoning with salt and pepper as needed.

Combine and Fill: Once the spaghetti squash is roasted and cool enough to handle, use a fork to scrape out the strands into a large bowl. Gently mix the freshly scraped squash strands with the creamy Alfredo sauce until evenly coated.

Stuff the Boats: Carefully spoon the cheesy squash mixture back into each half of the spaghetti squash, forming your “boats.”

Final Bake: Return the stuffed squash halves to the oven and bake for an additional 10-15 minutes, or until they are heated through and golden brown on top.

Garnish and Serve: Once baked, remove the squash from the oven and allow to cool for a couple of minutes. Garnish with freshly chopped parsley and sprinkle with red pepper flakes if you desire an added kick. Enjoy warm and delight in your delectable Creamy Spaghetti Squash Alfredo Boats!
