Ingredients

1 cup Arborio rice

4 cups vegetable broth (preferably homemade or low-sodium)

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

4 cups fresh spinach, chopped

½ cup white wine (optional)

1 cup grated Parmesan cheese

½ cup heavy cream

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Zest of 1 lemon (optional)

Instructions

Prepare the Broth: In a saucepan, pour in the vegetable broth and heat it over low flame. Keep this broth warm throughout the cooking process; do not bring it to a boil.

Sauté Aromatics: In a large skillet or heavy-bottomed saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes, or until it becomes translucent. Next, stir in the minced garlic and continue to sauté for an additional minute, allowing the garlic to become fragrant.

Cook Mushrooms: Toss the sliced mushrooms into the skillet and cook for approximately 5-7 minutes. Stir occasionally until they release their moisture and develop a rich, golden color. Season with a pinch of salt and pepper to taste.

Add Rice: Gently stir in the Arborio rice and toast it in the pan for about 2 minutes, stirring continuously. The edges of the rice should start to look slightly translucent.

Deglaze (Optional): If using white wine, pour it into the skillet now. Let it simmer for 1-2 minutes, stirring until most of the liquid has been absorbed by the rice.

Cook the Risotto: Begin adding the warm vegetable broth, one ladleful at a time, to the rice mixture. Stir frequently, allowing the rice to absorb almost all the liquid before adding the next ladleful. This process will take about 18-20 minutes, and your risotto should become creamy while the rice remains tender yet slightly al dente.

Add Spinach: When the rice is nearly cooked to your liking, fold in the chopped spinach. Allow it to cook for an additional 2-3 minutes, stirring occasionally until the spinach is wilted and bright green.

Finish the Dish: Remove the skillet from heat. Stir in the heavy cream and grated Parmesan cheese until everything is beautifully combined and the risotto is creamy. Taste and adjust the seasoning with salt and pepper as needed. For an added burst of flavor, mix in the lemon zest if desired.

Serve: Ladle the creamy risotto into serving bowls. Garnish with a sprinkle of chopped fresh parsley and, if you like, some extra grated Parmesan cheese. Serve warm and enjoy!

                      - Presentation Tips: For an elegant touch, serve the risotto in shallow bowls and drizzle with a little extra olive oil before garnishing with parsley. This adds shine and enhances the dish’s overall visual appeal!
