12 oz cheese tortellini

2 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup black olives, sliced

1 tablespoon extra virgin olive oil

1 tablespoon freshly squeezed lemon juice

1 teaspoon garlic powder

1/2 teaspoon dried oregano

Salt and black pepper to taste

1/2 cup Greek yogurt (substitute with sour cream for a tangy twist)

1/4 cup mayonnaise

Fresh parsley, chopped (for garnish)

Cook the Tortellini: Bring a large pot of salted water to a rolling boil.
