2 boneless, skinless chicken breasts (approximately 1 lb/450g), diced into bite-sized pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 can (14 oz/400g) crushed tomatoes

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for heat)

1 cup fresh basil leaves, chopped, plus extra for garnish

1/2 cup freshly grated Parmesan cheese, plus extra for serving

Juice of 1/2 lemon

Cook the Pasta: Fill a large pot with water, adding a generous amount of salt, and bring it to a rolling boil. Once boiling, add the penne pasta and cook according to the package instructions until al dente. Drain the pasta in a colander and set it aside, reserving a splash of the pasta cooking water.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the diced chicken breasts with salt and pepper. Add the chicken to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and transfer it to a plate to keep warm.

      Sauté the Garlic: In the same skillet used for the chicken, add the minced garlic. Sauté over medium heat for about 1 minute, stirring frequently, until fragrant but not browned. This step infuses the oil with garlicky goodness.
