1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon fine sea salt

¼ teaspoon freshly ground black pepper

Optional: ½ teaspoon cayenne pepper for a kick of heat

Optional: Fresh parsley, chopped, for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Chickpeas: After rinsing the chickpeas thoroughly under cold water, gently spread them out on a clean kitchen towel or several layers of paper towels. Use another towel to pat them dry carefully, ensuring they’re as moisture-free as possible for maximum crispiness when baked.

      Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas with olive oil, garlic powder, onion powder, smoked paprika, ground cumin, sea salt, black pepper, and cayenne pepper (if using). Toss the chickpeas well until they are evenly coated with the oil and the spice mixture.

        Bake the Chickpeas: Transfer the seasoned chickpeas to the prepared baking sheet, spreading them out in a single layer for even cooking. Place the baking sheet in the preheated oven and bake for 25-30 minutes. Be sure to shake the pan or stir the chickpeas halfway through the cooking time to promote uniform crispiness.
