For the Egg Rolls:

1 pound large shrimp, peeled and deveined

1 cup finely shredded cabbage

1/2 cup grated carrots

1/4 cup chopped green onions

2 cloves garlic, minced

1 tablespoon freshly grated ginger

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon cornstarch

Salt and pepper to taste

12 egg roll wrappers

For the Dipping Sauce:

1/4 cup soy sauce

1 tablespoon rice vinegar

1 teaspoon honey or sugar

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional)

For Baking:

Cooking spray or olive oil for brushing

Prepare the Filling:

    - In a large skillet set over medium heat, add the peeled and deveined shrimp. Cook the shrimp for approximately 2-3 minutes, or until they turn pink and opaque. Once cooked, remove from heat and allow to cool briefly.

      - Chop the cooked shrimp into small, bite-sized pieces and transfer them to a mixing bowl.

          Assemble the Egg Rolls:

            - Position an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the shrimp filling into the center of the wrapper.

              - Fold the corner closest to you over the filling, then bring the side corners inward, and roll the wrapper away from you to create a tight cylinder. Seal the edge by dabbing it with a bit of water. Repeat this process with the remaining wrappers and filling.

                Prepare for Baking:
