1½ lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, thinly sliced

1 bell pepper (any color), thinly sliced

1 cup corn (frozen or canned, drained if canned)

3 cloves garlic, minced

2 cups chicken broth

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon salt

¼ teaspoon freshly cracked black pepper

Juice of 1 lime

Fresh cilantro, for garnish

Optional toppings: Sliced avocado and sour cream

Prepare the Chicken: Lay the boneless, skinless chicken breasts at the bottom of your slow cooker. Sprinkle evenly with salt, black pepper, chili powder, ground cumin, paprika, smoked paprika, and dried oregano, ensuring the chicken is well-seasoned.

    Add Vegetables: Layer the thinly sliced onions and bell pepper on top of the seasoned chicken. Sprinkle the minced garlic over the vegetables, then add the black beans, corn, and the can of diced tomatoes (including juices). Pour the chicken broth evenly over all the ingredients to soak up the flavors.
