2 cups cooked shredded chicken (rotisserie chicken works wonderfully)

8 oz egg noodles

3 cups chicken broth

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup frozen mixed vegetables (such as peas, carrots, and corn)

1 teaspoon garlic powder

1 teaspoon onion powder

2 cups shredded cheddar cheese (divided)

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Cook the Noodles: In a large pot, bring salted water to a rolling boil. Add the egg noodles and cook them until they are al dente, which should take about 6-7 minutes. Once cooked, drain the noodles and set them aside.
