Ingredients

1 lb (450 g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 (15 oz) can diced tomatoes, undrained

1 (6 oz) can tomato paste

2 cups beef broth

2 tablespoons Worcestershire sauce

2 teaspoons dried oregano

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon freshly ground black pepper

2 cups elbow macaroni (uncooked)

1 cup shredded sharp cheddar cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions

Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned and no longer pink, using a spatula to break it apart into small pieces. Once browned, drain any excess fat and transfer the beef to the crockpot.

Sauté Vegetables: In the same skillet, add the finely chopped onion, minced garlic, and diced bell pepper. Sauté for approximately 3-5 minutes until the onion becomes translucent and fragrant. Pour the mixture into the crockpot.

Incorporate Liquids: To the crockpot, add the undrained diced tomatoes, tomato paste, beef broth, and Worcestershire sauce. Stir gently to combine all the ingredients.

Season the Mixture: Sprinkle in the dried oregano, smoked paprika, salt, and freshly ground black pepper. Mix well to ensure all ingredients are evenly coated with the seasonings.

Cook: Cover the crockpot with its lid and set it to cook on low for 4-6 hours or on high for 2-3 hours.

Add the Pasta: About 30 minutes before the cooking time concludes, incorporate the uncooked elbow macaroni into the goulash. Stir to mix, then cover and continue cooking until the pasta is tender and cooked through.

Serve Up: After the cooking time, give the goulash a thorough stir to combine all elements evenly. Ladle the goulash into bowls and generously top each serving with shredded sharp cheddar cheese. Finish with a sprinkle of chopped parsley for a burst of color and freshness.

Enjoy!: Serve the goulash hot, alongside crusty bread or a crisp green salad for a heartwarming, satisfying meal.
