Easy BBQ Chicken and Sweet Potato Bowls

For the BBQ Chicken:

2 boneless, skinless chicken breasts

1 cup BBQ sauce (your preferred brand or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

For the Sweet Potatoes:

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon ground cinnamon

For the Bowls:

4 cups fresh spinach or mixed salad greens

1 ripe avocado, sliced

¼ cup red onion, thinly sliced

½ cup corn (canned or frozen)

¼ cup feta cheese (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot enough for roasting.

    Prepare the sweet potatoes: In a large mixing bowl, combine the diced sweet potatoes with olive oil, ground cumin, ground cinnamon, salt, and pepper. Toss until the sweet potatoes are well coated with the mixture. Spread them out in a single layer on a baking sheet lined with parchment paper for easy cleanup.

      Roast sweet potatoes: Place the baking sheet in the preheated oven and roast the sweet potatoes for about 25-30 minutes. Toss them halfway through to ensure even cooking, until they are tender and lightly caramelized.

        Marinate the chicken: While the sweet potatoes are roasting, prepare the chicken. Rub the chicken breasts with olive oil, then sprinkle on the garlic powder, smoked paprika, salt, and pepper. Coat the chicken thoroughly with BBQ sauce, reserving a small amount for drizzling later.

          Cook the chicken: Heat a grill pan or skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C).
