Ingredients

1 lb (450g) ground beef

1 cup onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (choose your favorite color)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, including juice

2 tablespoons tomato paste

1 cup beef broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Shredded cheese (for serving, optional)

Sour cream (for serving, optional)

Instructions

Sauté Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and diced bell pepper, sautéing until they soften and become translucent, about 5-7 minutes.

Add Garlic: Incorporate the minced garlic into the pot and cook for an additional 1-2 minutes, stirring frequently until the garlic becomes fragrant but not browned.

Brown the Beef: Introduce the ground beef into the pot, breaking it apart with a wooden spoon. Cook the meat until it turns a rich brown and is no longer pink, around 5-6 minutes. If there is excess fat, carefully drain it from the pot.

Toast Spices: Sprinkle in the chili powder, ground cumin, smoked paprika, cayenne pepper (if using), and season with salt and pepper. Stir well and cook this mixture for another 2 minutes to enhance the flavors of the spices.

Combine Ingredients: Pour in the diced tomatoes with their juice, tomato paste, beef broth, kidney beans, and black beans. Stir thoroughly to combine all that goodness. Increase the heat to bring the mixture to a gentle simmer.

Simmer and Develop Flavors: Once simmering, reduce the heat to low. Cover the pot and let it simmer for 20-30 minutes. Stir occasionally to ensure nothing sticks to the bottom, allowing the flavors to meld beautifully.

Taste and Adjust: After simmering, taste the chili and adjust the seasoning as needed. For an extra kick, add more chili powder or cayenne pepper if desired.

Serve: Ladle the chili into bowls and garnish with freshly chopped cilantro. For a richer texture, top with shredded cheese and a dollop of sour cream before serving.

                  Presentation Tips:

                    - Serve in rustic bowls to highlight the hearty nature of the chili.

                      - Consider adding a sprinkle of additional cilantro and a slice of lime on the side for a fresh touch.
