1 lb Italian sausage (your preference: mild or spicy)

2 cups baby potatoes, cut in half

2 cups carrots, chopped into rounds

1 cup bell peppers, cut into strips (any variety)

1 cup broccoli florets

1 red onion, sliced

4 cloves garlic, minced

3 tbsp olive oil

1 tsp dried oregano

1 tsp paprika

Salt and black pepper to taste

Fresh parsley, chopped (for topping)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a sizable mixing bowl, combine the halved baby potatoes, round carrots, bell pepper strips, broccoli florets, and sliced red onion.

      Drizzle the olive oil over the mixed vegetables, then incorporate the minced garlic, dried oregano, paprika, salt, and black pepper. Toss until all the vegetables are evenly coated.

        On a large baking sheet, arrange the seasoned vegetables in a single layer, leaving a gap in the center for the sausage.

          Cut the Italian sausage into pieces about 1 inch thick and place them in the center of the baking sheet alongside the veggies.

            Roast in the preheated oven for 25-30 minutes, or until the sausage becomes browned and the vegetables are tender, stirring halfway through to promote even cooking.

              Once removed from the oven, finish by garnishing with fresh parsley before serving.
