4 boneless, skinless chicken breasts

2 tablespoons olive oil (plus more as needed)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup fresh corn kernels (or 1 cup canned corn, drained)

2 cloves garlic, minced

1/4 cup fresh basil, chopped

1 tablespoon balsamic vinegar

Zest and juice of 1 lemon

Optional: Crumbled feta cheese for topping

Instructions
 

Marinate the Chicken:

    - In a large mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, Italian seasoning, salt, and black pepper.

      - Add the chicken breasts to the marinade, ensuring they are thoroughly coated.

        - Cover and let the chicken marinate for at least 20 minutes at room temperature, or up to 2 hours in the refrigerator for a more intense flavor.

          Cook the Chicken:

            - Heat a large skillet over medium-high heat and add a splash of olive oil.

              - Once the oil is shimmering, carefully place the marinated chicken breasts in the skillet.

                - Cook for approximately 6-7 minutes on each side, until the chicken is golden brown and the internal temperature reaches 165°F (75°C).
