Ingredients

6 ripe heirloom tomatoes, diced

1/4 cup fresh basil leaves, finely chopped

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon extra-virgin olive oil, plus additional for drizzling

Salt and black pepper to taste

1 French baguette, sliced into 1/2-inch thick pieces

1/4 cup grated Parmigiano-Reggiano cheese (optional)

Instructions

Prepare the Tomato Mixture: In a medium-sized mixing bowl, combine the diced heirloom tomatoes, chopped basil, minced garlic, balsamic vinegar, and 1 tablespoon of olive oil. Season generously with salt and freshly cracked black pepper. Gently toss the mixture with a spatula until everything is well combined. Cover the bowl with plastic wrap and allow it to rest at room temperature for at least 15 minutes so the flavors can develop and blend.

Toast the Baguette: Preheat your oven to 400°F (200°C). Arrange the baguette slices in a single layer on a baking sheet. Use a pastry brush to lightly coat each side of the slices with olive oil. Place them in the preheated oven and toast for approximately 5-7 minutes, or until they are golden brown and have a crispy texture. Keep a close eye on them to prevent burning.

Make Garlic Toast: As soon as the baguette slices are toasted to a perfect golden color, remove them from the oven. Take a raw garlic clove, cut it in half, and immediately rub the cut side across one side of each toasted slice of bread. This will infuse a delightful garlic flavor into the toast.

Assemble the Bruschetta: Spoon a generous amount of the prepared tomato mixture onto the garlic-rubbed side of each toasted baguette slice. If desired, sprinkle some grated Parmigiano-Reggiano cheese on top for an extra layer of flavor and creaminess.

Serve: Drizzle a little more olive oil over the assembled bruschetta and garnish with extra fresh basil leaves for a pop of color and freshness. Serve immediately to enjoy the vibrant and delicious burst of flavors!
