Ingredients

4 large whole wheat tortillas or wraps

1 cup hummus (store-bought or homemade)

1 cucumber, thinly sliced

1 bell pepper (choose red, yellow, or orange for color), julienned

1 medium carrot, shredded

1 cup baby spinach or mixed greens

1 avocado, sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

1 tablespoon lemon juice

Salt and pepper to taste

Fresh herbs (such as parsley or cilantro) for garnish

Instructions

Prepare Your Veggies: Begin by thoroughly washing all your fresh vegetables under cool water. Slice the cucumber into thin rounds, julienne the bell pepper into strips, shred the carrot using a grater, and cut the avocado into even slices. Finally, thinly slice the red onion.

Make the Hummus Spread: If you're making homemade hummus, combine 1 can of chickpeas, 2 tablespoons of tahini, 1 clove of garlic, 2 tablespoons of lemon juice, and 2 tablespoons of olive oil in a food processor. Blend until the mixture is smooth and creamy. If you're opting for store-bought hummus, simply set it aside.

Lay out the Wraps: Choose a clean, flat surface or cutting board and place one tortilla on it. Spread approximately 1/4 cup of hummus evenly across the entire surface of the tortilla, ensuring it's well coated.

Add Veggies: Next, layer your fresh vegetables on top of the hummus. Start with a handful of spinach or mixed greens as a base, followed by the cucumber slices, julienned bell pepper, shredded carrot, avocado slices, and thinly sliced red onion. If you want to include feta cheese, sprinkle it evenly on top of the vegetables.

Season: Drizzle the assembled veggies with lemon juice for a touch of brightness. Sprinkle salt, pepper, and your choice of fresh herbs over the top to enhance the flavors.

Wrap It Up: Starting from one end of the tortilla, roll it tightly around the fillings, being careful to keep everything secured. As you roll, fold in the sides to create a neat wrap.

Cut and Serve: After you've rolled all the wraps, use a sharp knife to cut each wrap in half diagonally for easier handling. Arrange the wraps on a serving platter, adding extra fresh herbs as a garnish if desired.

Enjoy: Serve your fresh veggie wraps immediately, accompanied by additional hummus on the side for dipping. For an on-the-go option, wrap them in foil for a healthy and convenient meal!
