Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or substitute with peanut butter)

1/4 cup honey or maple syrup (your choice)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup chopped dark chocolate (optional, for a gourmet touch)

1/4 cup chopped walnuts or pecans (optional, for added crunch)

Instructions

In a large mixing bowl, mash the ripe bananas until smooth. Then, add the almond butter, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to mix everything together until the mixture is completely blended and creamy.

Next, add the rolled oats, ground cinnamon, and salt to the banana mixture. Stir well to ensure all ingredients are evenly incorporated. If you’re opting to include the chopped dark chocolate or nuts, gently fold them into the mixture at this point.

Prepare an 8x8-inch (or any similarly sized) baking dish by lining it with parchment paper. Make sure to leave some overhang on the sides. This will make it easier to lift the oat squares out once they are set.

Pour the oat mixture into the prepared baking dish, spreading it evenly with a spatula. Use firm pressure to press down the mixture, creating a smooth, compact layer.

Place the baking dish in the freezer and allow it to chill for at least 2 hours, or until the oat mixture is firm and set to the touch.

After the freezing period, lift the oat square from the dish using the parchment paper overhang. Use a sharp knife to cut into squares or bars of your preferred size.

To store, place the cut squares in an airtight container and keep them in the freezer for up to 1 month. These make for a wonderfully refreshing treat enjoyed straight from the freezer!

Presentation Tips: For a delightful presentation, consider drizzling a bit of honey or melted dark chocolate over the top just before serving. You can also garnish with a sprinkle of nuts or a dusting of cinnamon for added flair.
