2 cups ripe mango chunks (fresh or frozen)

1 cup full-fat coconut milk (for rich creaminess)

1/4 cup honey or maple syrup (adjust according to your sweetness preference)

1/2 cup shredded unsweetened coconut

1 tsp pure vanilla extract

1 tbsp freshly squeezed lime juice

1/4 tsp salt

Optional: zest of one lime for garnish

Blend the Mango: In a high-speed blender, combine the ripe mango chunks, coconut milk, honey (or maple syrup), vanilla extract, lime juice, and salt. Blend the mixture on high until it is smooth and creamy, stopping to scrape down the sides as necessary to ensure everything is well incorporated.

    Incorporate Coconut: Transfer the blended mango mixture into a mixing bowl. Gently fold in the shredded coconut using a spatula until the coconut is evenly distributed throughout the mango mixture.

      Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, allowing some overhang on the sides to facilitate easy removal later.

        Pour the Mixture: Carefully pour the mango-coconut mixture into the lined baking dish. Using a spatula, spread it out evenly to ensure uniform thickness.

          Freeze: Cover the baking dish with plastic wrap or a lid, then place it in the freezer. Allow it to freeze for at least 4-6 hours or until the bars are completely solid and firm to the touch.

            Cut into Bars: Once the mixture is frozen solid, remove the baking dish from the freezer. Use the parchment overhang to lift the block of bars out of the dish. Place it on a cutting board and cut into equal-sized bars or squares using a sharp knife.

              Garnish & Serve: For an extra burst of flavor and a touch of color, sprinkle lime zest over the top of each bar. Serve immediately, or place them in an airtight container to store in the freezer for later enjoyment.
