2 cups ripe peaches, pitted and chopped (can use fresh or frozen peaches)

1 cup plain Greek yogurt (or opt for vanilla yogurt for extra sweetness)

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/2 cup granola (optional, for a crunchy topping)

Fresh mint leaves (optional, for a refreshing garnish)

Instructions
 

Prepare the Peaches: If using fresh peaches, rinse them thoroughly, then pit and chop them into small, bite-sized pieces. If you’re using frozen peaches, allow them to thaw slightly before chopping into pieces.

    Create the Yogurt Base: In a mixing bowl, combine the chopped peaches with the Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Stir the mixture until everything is well blended. For a creamier consistency, consider using an immersion blender to puree the mixture, or leave it slightly chunky for delightful bites of peach in your yogurt cups.

      Fill the Cups: Take silicone muffin cups or a silicone ice cube tray and spoon or pipe the yogurt mixture into each mold. Make sure to leave a bit of space at the top of each cup, as the mixture may expand slightly when frozen.
