Frozen Watermelon Lime Pops

4 cups seedless watermelon, chopped into small cubes

1/4 cup freshly squeezed lime juice (approximately 2-3 limes)

2 tablespoons honey or agave syrup (adjustable based on your preferred sweetness)

A pinch of salt

Lime slices and fresh mint leaves (optional, for garnish)

Prepare the Watermelon: Begin by cutting your seedless watermelon into small, manageable cubes. If using a whole watermelon, ensure any seeds are removed before chopping.

    Blend the Mixture: In a blender or food processor, combine the watermelon cubes, fresh lime juice, honey or agave syrup, and a pinch of salt. Blend until the mixture is completely smooth and well combined.

      Taste and Adjust: After blending, taste the mixture to see if it meets your sweetness preference. If you desire a sweeter flavor, slowly add more honey or agave syrup and blend again briefly to incorporate.

        Pour into Molds: Carefully pour the watermelon-lime blend into popsicle molds, making sure to leave a little space at the tops of the molds to allow for expansion as they freeze.

          Insert Sticks: If your popsicle molds come with sticks, insert them into the mixture. If not, cover the molds with aluminum foil and poke the sticks through the foil to keep them in place while freezing.

            Freeze: Place the molds flat in the freezer and freeze for a minimum of 4 to 6 hours, or until fully set. For the best results, consider freezing overnight.

              Release the Pops: When you’re ready to enjoy your pops, gently run warm water over the outside of the molds for a few seconds. This will help loosen the pops for easy removal.
