2 cups plain Greek yogurt

1 cup unsweetened apple sauce

1 teaspoon ground cinnamon

2 tablespoons honey (substitute with maple syrup for a vegan option)

1 medium apple, finely chopped (Granny Smith or Honeycrisp recommended)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Optional: Chopped nuts (such as walnuts or pecans) for added crunch

Instructions
 

Prepare the Apple Mixture: In a medium-sized mixing bowl, combine the finely chopped apple with the lemon juice, ground cinnamon, and honey (or maple syrup). Stir the ingredients thoroughly to ensure the apple pieces are evenly coated with the mixture. Allow it to sit for about 10 minutes. This resting period helps to soften the apples slightly and infuse them with flavor.

    Make the Yogurt Base: In a separate bowl, whisk together the plain Greek yogurt and vanilla extract until the mixture is smooth and creamy. For those with a sweeter tooth, feel free to add an additional drizzle of honey to taste.

      Layer the Mixture: Grab your popsicle molds and begin the layering process. Start by adding a generous layer of the yogurt mixture, filling each mold until it’s about one-third full.

        Add Apple Cinnamon Swirl: Next, spoon the prepared apple mixture on top of the yogurt layer. Using a knife or skewer, gently swirl the apple mixture into the yogurt. This creates a beautiful marbled effect, mixing the creamy yogurt with the spiced apple.

If your molds do not come with lids, place them in the freezer for about 1-2 hours until the mixture is firm enough to hold the sticks, then insert them.

              Freeze: Place the popsicle molds in the freezer and let them freeze completely for at least 4-6 hours, or until the pops are solid and ready to enjoy.
